What do you get out of it?
One record per product, with the sizes and colours you actually sell sitting underneath it. Billing, stock and pricing all read from that record, so the counter, the reports and the storefront describe the same shop.

A product holds its variants
The product is the thing you sell; each variant is a version of it with its own SKU, price, cost and stock. A shirt in three sizes is one product and three variants, not three unrelated entries.
